Health Department Regulated Products
For caterers, push cart operators and others making fresh foods for immediate consumption, here are the Rules Governing the Safety of Food Service Establishments in North Carolina.
The Buncombe County Health Department is responsible for inspecting food establishments that prepare food directly for consumers. They have a helpful website. Call David Mease at 828-250-6900 for more information and to get your catering or mobile cart permit.
Packaged Products and Good Manufacturing Practices
For those producing and packaging food in jars, plastic bags and containers, frozen or refrigerated items, as well as baked goods, you may come under one or more of the following sets of regulations. Label Review
Before you have your labels printed for your packaged products, talk to Joan Sims, the FDA Compliance Officer at NCDA (919-733-7366) to be sure they are in compliance with FDA Label rules. This will save you a lot of money and headaches if you don't do them right the first time. Her email is joan.sims@ncagr.gov
Acidified Foods
Acidified foods such as pickles, tomato sauces, many hot sauces, etc....have to follow a special set of regulations due to their potentially hazardous nature. Please go to the FDA website to learn more about them.
